Fall is my absolute favorite time of year! Hoodies and pumpkin spice lattes, Halloween and Thanksgiving. Oh and did I mention Pumpkin Cupcakes with White Chocolate Pumpkin Buttercream Frosting????

Today was a really rough day for a lot of little reasons that built up on me, baking these kind of helped. I guess baking is just one of those hobbies that takes so much of me mentally and physically that it keeps me from thinking of all the crap that’s going on around me. Enjoy.

Up next…

I think I’ll attempt to tackle bread or cookies again in the near future. My first few attempts at both were a bit of an epic fail, but I think my love of baking will outweigh the annoyances of failed attempts. Chocolate bread? Grandma’s cookies with practically every baking ingredient ever? Coca Cola Cake? Crumb Cake? I’m thinking yes ;]

The dreams of a cupcaker

Sudden revelation of the night: while everyone else sleeps or at the very least spends their night with the ones they love, I stay up searching the web for recipes to perfect. And if I’m so much as thinking about baking before I go to bed my dreams consist of the best way to decorate different pastries. Not complaining, just pondering what I am at the very core of it all. A hopeless baker I suppose.

Dark Chocolate Peanut Butter, Salted Caramel and a mistake…

So I totally loved spending my day off running around picking up things to test out these two new recipes….with the exception of forgetting one key ingredient: PEANUT BUTTER! Thankfully I had just enough left in the house to make the peanut butter frosting and I just used peanut butter baking chips in the actual batter. The salted caramel turned out pretty well if you subtract the two attempts I made to make a caramel filling (wound up ditching the idea after I burnt it both times despite never leaving the stove top). All in all the work meeting was slightly less drab with the addition of cupcakes and capri sun!

p.s. When making the chocolate decorations I broke the cardinal rule of not catching knives as they fall. Damn reflexes.
